The Happiness Trap: Happiness for the Rest of Us

A frustrated victim of motivational speakers, Arena begins her look at the happiness industry with us while reading The Happiness Project by Gretchen Rubin. She will take us back to a Millionaire Mind Seminar where her quest to live her dreams brought her to a standstill with debt, legal trouble, and living in her worst nightmare - geographically, even.

Amy Arena holds a B.A. in American Studies from San Francisco State University. A respected actress and world-renown singer (at least underground) , Arena has written several peer-appreciated, but not-yet-produced plays, has published poetry and won awards for her short stories on websites that no longer exist, and produced an album that she can't afford to hype with the finesse of the happiness experts.

  • Something a Little Different

    While I was sick, I made batches of Top Ramen and added lots of my own flavors so I ended up with a few “oriental” seasoning packets.  Yesterday, I came into three bags of standard potatoes.  Don’t ask.  Now I have to figure out what to do with them.  Yesterday, I made mush.   Not the greatest, but if you’re broke and need to be inventive like me, here it is. 

    10 medium peeled potatoes, cut in chunks

    1/2 baby carrots cut into thirds

    1 cup frozen onions, diced

    3 packets of oriental seasoning

    1-1/2 cup water

    I threw all of that into a crockpot on low for 12 hours.  Actually, I only used two seasoning packets, but I like salt and think a third would do.  I left it on over night and for lunch today I served myself with extra salt and some pepper.  I think a lemon would do nicely.  I didn’t need to because of the potato starch, but if you want it to be even thicker of a goulash you can sprinkle some corn starch or thickener lightly on the top and stir in, but this isn’t brothy at all.  (I also added a can of green beans.  Normally I cook only with fresh foods, but I seriously “came into some food” so I’m making do.)
